On this special day, why not grill up some mouthwatering delicacies to make your mother feel extra special? If you’re anything like us, then you know that your mom probably has an impressive grill at her disposal.
That being said, most of her grills are usually reserved for special occasions like Mother’s Day and Fourth of July. Yes, we know it seems ridiculous to have to think about the logistics of a holiday in order to let your mom enjoy cooking it for herself.
However, try not to take it too personally. After all, it is just another example of how your family’s values and traditions get polished over time and how you as a person react to them as well. Seeing how this was the first time we had ever been invited over for Mother’s Day (or any other holiday), we decided that scampi would be the perfect choice on this particular occasion.
If our guest appearance wasn’t enough of a hint, the fact that our new home came with its own personal freshwater pool certainly sealed the deal. In other words, if we wanted scampi with shrimp sauce again soon after settling into our new home then it was only right that we make it ourselves instead of using out-of-season frozen shrimp from the grocery store!
What You Need to Grill for Mothers Day
What to grill for mothers day? Here are some ideas:

Shrimp Scampi with Garlic Butter
The shrimp scampi sauce is really straightforward, so we decided to go with a classic garlic butter. The garlic in the butter gives it that extra subtle, but still flavorful crunch. For an added touch, we used the leftover shrimp shells (which would otherwise have been discarded) to create a broth for the sauce.
This not only ensures that your scampi tastes at least somewhat fresh and natural, but also makes sure that you are getting the most out of your ingredients (with some shells thrown in for good measure).
All-in-all, this meal is absolutely perfect for any mom who appreciates good food and who knows how much she appreciates you!
Summer Squash and Black Bean Tostadas
When summer time hits your area, you’ve gotta be ready to cook up a storm. There are so many delicious and fresh options available to you. One of our favorite summertime dishes is black bean tostadas. They are easy to make and keep things light, while still packing a flavorful punch.
Jerk Chicken Skewers
Start by marinating the chicken in a mixture of jerk seasoning, lime zest, cumin, garlic powder, salt and pepper. Let this sit for about 45 minutes to an hour. In the meantime, get your vegetables prepped by purchasing frozen broccoli, green beans and carrots.
When you are ready to go ahead with the skewers, thread three pieces of chicken onto a skewer (leave at least 3-4 inches between them). Thread one piece of broccoli on each side of the skewer then add two pieces of green beans over it. Once all ingredients are arranged on the skewer, brush remaining jerk seasoning over each one and stick it into a hot grill or pan.
Grill for about 8 minutes on each side or until chicken reaches an internal temperature of 165 degrees F.
Rainbow BBQ Burger
Even if you’re not a big fan of seafood, we’d be willing to bet that there are plenty of other dishes that your mom would enjoy. Why don’t you try out this delicious recipe for rainbow BBQ burger? It takes a few minutes to put together and can be finished off in under ten minutes with the help of one or two backyard barbecues.
If you want to make it healthier, then skip the buns and use lettuce instead of bread. You can also add some grilled chicken breasts or portobello mushrooms on top if you need to complicate things a little without sacrificing flavor.

How to Make Summer Squash and Black Bean Tostadas
1 16 oz. bag of corn tortillas 1 green bell pepper, diced 2 cups black beans, cooked and drained 2 cups summer squash, diced 5 cloves garlic, minced 1/4 cup onion, chopped 2 tablespoons olive oil or canola oil (we like using both) Salt and pepper to taste 1/2 cup cilantro, chopped 1 tablespoon lime juice (we like using freshly squeezed) 1/2 teaspoon cumin powder
How to Make Jerk Chicken Skewers
Step 1: Start by preheating your grill to high heat. This will help get it nice and hot so that the chicken doesn’t stick to the grate.
Step 2: Cut off the drumsticks of the chicken (the part that goes into the ground) and put them on a plate. Make sure to give these pieces a quick rinse under cold water before you do this—this will clean off any dirt or residue from the chicken, which will prevent it from sticking to the bottom of your grill later on.
Step 3: Next, start by cutting each breast in half so that you have two identical-sized breasts.
Step 4: Repeat step 3 with cutting each wing in half so that you have four pieces total. Repeat this process for both wings and breasts until you have eight pieces total. This should only take about 5 minutes or less, depending on how fast you can cut through chicken!
Step 5: Then, simply assemble your skewers by threading one piece of chicken onto another; make sure to use toothpicks if necessary so that everything stays together.
Repeat this process for all 8 pieces of chicken (for 4 people) and set aside until grilling time! We recommend using an oven mitt or tongs when handling raw meat as they can be wet!
